This Cucumber Honeydew Agua Fresca is SO refreshing, contains just 5 ingredients, and is easy to whip up on a hot summer day!

If you've never had Agua Fresca, it is a light Mexican drink made by blending up fresh fruit, grains, or seeds with water and a sweetener.
It's incredibly refreshing, hydrating, and usually contains some fruit pulp, so it has more fiber than other juices!
Ingredients:

Ingredient & substitution notes:
- Sugar: I prefer to use blended sugar in this recipe; however, you can swap it for agave, maple syrup, or even honey.
- Depending on how sweet your honeydew is, you may be able to reduce the sugar, too!
- Cucumber: I used a standard slicing cucumber for this recipe and just removed the skin before blending.
- There isn't a good substitute here.
- Honeydew: Make sure to remove the inner seeds and outer skin before adding to the blender!
- You can swap 1:1 for cantaloupe, but it will change the drink's color.
- Lime juice: Lime does taste best, but swap 1:1 with lemon juice if that's what you have on hand!
- Coconut water: I love the extra hydration and flavor coconut water brings to this drink, but you can just use regular water, too!
How to make cucumber honeydew agua fresca
Prep the ingredients:
Peel your cucumber to remove the outer skin, discard the ends, and dice it into chunks. Cut your honeydew in half and remove the inner seeds. Then, cut off the tough outer skin and chop the honeydew into large chunks. Juice your limes at this time as well.
Blend & strain:
Add the cucumber and honeydew to the blender and blend until smooth.
I used my Vitamix, so this really only took 2 minutes, but if you are using a less strong blender, you may have to stop it a few times to scrape down the sides at the start.
Once blended, use a fine mesh strainer to strain the juice from the pulp. I like to use a spoon to swirl the pulp around and press it down to get every bit of juice out.
Once all the juice has been removed, take ¼ cup of the pulp and add it back to the juice. Then, discard the rest of the pulp.
The reason we don't use all the pulp is that the juice is a bit too thick with all of it, but ¼ cup is the perfect amount!

Mix & serve!
Add the juice to a pitcher with the coconut water and lime juice. Mix, then pour over cups filled with ice to serve!

How do I store agua fresca?
Since it is a fresh juice with no pasteurization/preservatives, agua fresca should be stored in a sealed airtight container in the fridge immediately after making. It will keep for about 2-3 days.
Because it doesn't contain preservatives, it will separate a bit in the fridge, so always stir before serving and only add ice when you are ready to serve!

Cucumber Honeydew Agua Fresca
Ingredients
- 1 large Cucumber peeled and cut into large chunks, about 2 cups
- ½ Honeydew melon seeds & skin removed, about 4 cups diced
- ¼ cup sugar or agave/honey
- 2 ½ cups coconut water or water
- 3 Tablespoons fresh lime juice about 2 limes juiced
- 4 cups ice add when serving
- cucumber slices optional, as garnish
- lime wedges optional, as garnish
Instructions
Prep the Ingredients:
- First, peel the skin off the cucumber and cut off and discard the ends. Cut the remaining cucumber into large chunks and set aside.
- Next, cut your honeydrew in half and discard the seeds in the center. Then, remove the outer skin from the honeydew and discard. Cut the remaining honeydew into large chunks and set aside.
- Finally, juice the limes and set aside.
Blend and strain:
- Add the cucumber chunks, honeydew chunks, and sugar to a blender. Blend together until thick and smooth.
- Use a fine mesh strainer to strain the juice into a large bowl. You can use a spoon to press the blended mixture around and really get out all of the juice.
- Then, take ¼ cup of the pulp and add it to the bowl of juice. Discard the rest of the pulp. (We do this because the juice is a bit too thick with all of the pulp).
Mix & serve!
- Add the juice to a large pitcher along with the coconut water and fresh lime juice. Stir together.
- When you are ready to serve fill a glass with ice and optional sliced cucumbers.Then, pour in the juice and enjoy!
