Ingredients:

Ingredient & substitution notes:
- Cherries: Must be fresh! I used Bing cherries which will give you a really rich, sweet, and dark red syrup.
- Any variety of cherry should work subbed 1:1.
- Lime: Again, must be fresh!
- If you'd like even more lime flavor, add about 1 teaspoon of lime zest to the cherry simple syrup.
- Sparkling water: I used plain San Pellegrino sparkling water; however, you can use a flavored sparkling water or seltzer too!
How to make cherry limeade
Make the cherry syrup:
First, remove the pits from your cherries. You can do this by slicing them in half and manually removing them, but my preferred way is always with a cherry pitter.
Then, add the fresh cherries, sugar, and water to a saucepan and turn the heat to medium. Mix until the sugar dissolves, then crush the cherries to help release their juices. You can do this with a fork or a potato masher.
Continue cooking the syrup at a simmer for about 5 minutes until it begins to thicken slightly.
Remove the cherry syrup from the heat and use a fine mesh strainer to strain out the chunks of cherries. Once cooled, I like to store it in my glass syrup dispensing bottles, but any closed container will work.
Let the syrup cool completely before using it in the cherry limeade.

Add everything to a glass:
Fill a glass up with ice. Then, add in 3-4 Tablespoons of the cherry syrup depending on how sweet you want your drink.
Next, add in ½ Tablespoon of fresh lime juice (about ½ lime juiced) and top with soda water.
Mix and drink as is or top with fresh cherries and a slice of lime to enjoy!

How do I store cherry lime soda?
The homemade cherry syrup can be stored in a closed container in the fridge for up to 2 weeks.
When making the limeade, you want to make it fresh every time so that the sparkling water does not go flat.

I can't wait for you to try this refreshing Cherry Limeade! With a homemade cherry syrup, fresh lime juice, and sparkling water, it's the best way to enjoy a drink in Summer!
