Cucumber Honeydew Agua Fresca

With just 5 ingredients, this Cucumber Honeydew Agua Fresca is perfectly sweet, refreshing, and a great Summer drink!

Ingredients 

  • 1 large Cucumber peeled and cut into large chunks, about 2 cups
  • ½ Honeydew melon seeds & skin removed, about 4 cups diced
  • ¼ cup sugar or agave/honey
  • 2 ½ cups coconut water or water
  • 3 Tablespoons fresh lime juice about 2 limes juiced
  • 4 cups ice add when serving
  • cucumber slices optional, as garnish
  • lime wedges optional, as garnish

Instructions

Prep the Ingredients:

  • First, peel the skin off the cucumber and cut off and discard the ends. Cut the remaining cucumber into large chunks and set aside.
  • Next, cut your honeydrew in half and discard the seeds in the center. Then, remove the outer skin from the honeydew and discard. Cut the remaining honeydew into large chunks and set aside.
  • Finally, juice the limes and set aside.

Blend and strain:

  • Add the cucumber chunks, honeydew chunks, and sugar to a blender. Blend together until thick and smooth.
  • Use a fine mesh strainer to strain the juice into a large bowl. You can use a spoon to press the blended mixture around and really get out all of the juice.
  • Then, take ¼ cup of the pulp and add it to the bowl of juice. Discard the rest of the pulp. (We do this because the juice is a bit too thick with all of the pulp).

Mix & serve!

  • Add the juice to a large pitcher along with the coconut water and fresh lime juice. Stir together.
  • When you are ready to serve fill a glass with ice and optional sliced cucumbers.Then, pour in the juice and enjoy!
