These flaky & soft Vegan Apple Spice Scones are filled with chunks of freshly baked apples and topped with a drizzle of apple spice icing for the perfect Fall dessert!

September is PEAK apple season, aka the perfect time to bake all the apple treats with freshly picked apples!

Ingredients:

Ingredient & substitution notes:
- Apples: Any variety works in this recipe as the bake time is pretty short! I used a mix of Gala and McIntosh.
- The key to making these scones great is to cut the apples into very small pieces, NOT large chunks. This way, the apples can cook & soften- and you truly have apple chunks in every bite!
- Apple Pie Spice: This is a mix of cinnamon, nutmeg, and allspice.
- Sub 1:1 with cinnamon for similar results, or make your own mix of the three spices!
- Oat milk: I love baking with oat milk, but any other plant-based milk substitute works, such as almond milk, coconut milk, or soy milk.
- Vegan butter: I used Country Crock olive oil sticks for this recipe.
- You can substitute 1:1 with normal butter.
- You can also substitute frozen coconut oil 1:1, but you will need to increase the salt to 1 teaspoon.
- Sparkling sugar: I like using this or turbinado sugar as a scone topping, as it is a coarse "square" sugar that adds a nice crunch.

How to make apple spice scones:
Make the scone dough:
First, mix the dry ingredients, including the all-purpose flour, sugar, baking powder, apple pie spice, and salt.
Next, cut in the cold cubed vegan butter using a pastry cutter until the dough is crumbly.
Then, add in the oat milk and vanilla. Mix with the pastry cutter until you have a shaggy dough.

Add in chopped apples:
For this recipe, I used a mix of Gala and McIntosh apples as that was the variety I had recently picked! However, any variety works. The key is to dice the apples up very small so they can soften during the short baking time.
Once diced, just mix them into the scone dough.

Shape the dough & freeze
Add the dough to a parchment-lined or well-greased baking tray. Then, form the dough into a disc 2 inches in height.
Freeze the tray of scones for about 15 minutes while you preheat the oven to 400F.

Slice & bake:
Once the oven has preheated, remove the tray from the freezer and cut the scones into 8 wedges. Separate them so they are at least 2 inches apart on the tray.
Before baking, sprinkle with some optional sparkling sugar or turbinado sugar for a crunchy topping!
Bake the vegan apple scones for 18-20 minutes, until browned on top and cooked throughout.

Top with apple spice icing & serve!
To make the apple spice icing, whisk together the powdered sugar, oat milk, and apple pie spice until smooth. Then, drizzle it over the cooled scones.
Let the icing set and harden for about 5 minutes, then serve & enjoy!

How do I store apple cinnamon scones?
Store baked apple spice scones in a closed container at room temperature for 2-3 days, in the fridge for 3-4 days, or in the freezer for up to one month.
Just let them defrost at room temperature for about 1 hour to enjoy!

Ingredients
Apple Scones:
- 1 ¼ cups finely diced apples 1-2 apples
- 2 ¼ cups all-purpose flour
- ½ cup sugar

- ¼ teaspoon apple pie spice

Instructions
Make the apple spice scone dough:
- Start by finely dicing the apples. To get 1 ¼ cups, I use anywhere from 1-1 ½ apples. Then, set the diced apples aside.
- Add the all-purpose flour, sugar, baking powder, apple pie spice, and salt to a large mixing bowl. Whisk together.
- Cut the cold vegan butter into chunks. Then, add it to the bowl of dry ingredients and use a pastry cutter to "cut" the butter into the dough until you have a crumbly mixture. You can also use a fork to do this step, though it will take longer.
- Next, add in the oat milk and vanilla. Use the pastry cutter or your hands to combine into a shaggy dough. The shaggy dough will be somewhat flaky and crumbly, yet still stick together when pressed.
- As a final step, add in the diced apples and use a spoon to mix them into the dough.
Shape & freeze the scones:
- Line a baking sheet with parchment paper or lightly grease a baking sheet. Then, turn the dough out onto the baking sheet.
- Form the dough into a large circle that is about 2 inches in height. It's okay if it's not a perfect circle!
- Place the tray of scone dough in the freezer for about 15 minutes before slicing. This makes the scones easier to slice and also helps re-solidify the chunks of butter in the dough.
- While the tray is in the freezer, preheat your oven to 400F.
Bake the scones:
- Once the oven has preheated, remove the scones from the freezer and cut them into 8 evenly sized triangles. Separate them on the baking tray so they are at least 2 inches apart.
- Generously sprinkle the 2 Tablespoons of (optional) sparkling/turbinado sugar on top of the apple scones.
- Add the scones to the oven and bake for 16-18 minutes, until cooked through. (*Please note: if your scones are not as tall or thick as mine, they will cook faster, so make sure to check at the 16-minute mark*)
- Remove the scones from the oven and transfer to a wire rack to cool.
Top with apple icing & serve!
- Once the scones have cooled, make the apple spice icing. Whisk together the powdered sugar, apple pie spice, and oat milk until you have a thick but smooth icing. Add more oat milk as needed.
- Drizzle the icing over the apple scones and let it set for a few minutes to harden. Serve & enjoy!
