Vegan Apple Spice Scones

These flaky & soft Vegan Apple Spice Scones are filled with chunks of freshly baked apples and topped with a drizzle of apple spice icing!

Ingredients 

Apple Scones:

  • 1 ¼ cups finely diced apples 1-2 apples
  • 2 ¼ cups all-purpose flour
  • ½ cup sugar
  • 2 ½ teaspoons baking powder
  • 1 teaspoon apple pie spice
  • ½ teaspoon salt
  • ½ cup cold vegan butter cut into cubes
  • ½ cup oat milk or soy milk/almond milk
  • 2 teaspoons vanilla bean paste
  • 2 Tablespoons sparkling sugar optional, as scone topping

Apple Spice Icing:

  • ¾ cups powdered sugar
  • ¼ teaspoon apple pie spice
  • 1 ½ Tablespoons oat milk

Instructions

Make the apple spice scone dough:

  • Start by finely dicing the apples. To get 1 ¼ cups, I use anywhere from 1-1 ½ apples. Then, set the diced apples aside.
  • Add the all-purpose flour, sugar, baking powder, apple pie spice, and salt to a large mixing bowl. Whisk together.
  • Cut the cold vegan butter into chunks. Then, add it to the bowl of dry ingredients and use a pastry cutter to "cut" the butter into the dough until you have a crumbly mixture. You can also use a fork to do this step, though it will take longer.
  • Next, add in the oat milk and vanilla. Use the pastry cutter or your hands to combine into a shaggy dough. The shaggy dough will be somewhat flaky and crumbly, yet still stick together when pressed.
  • As a final step, add in the diced apples and use a spoon to mix them into the dough.

Shape & freeze the scones:

  • Line a baking sheet with parchment paper or lightly grease a baking sheet. Then, turn the dough out onto the baking sheet. 
  • Form the dough into a large circle that is about 2 inches in height. It's okay if it's not a perfect circle!
  • Place the tray of scone dough in the freezer for about 15 minutes before slicing. This makes the scones easier to slice and also helps re-solidify the chunks of butter in the dough.
  • While the tray is in the freezer, preheat your oven to 400F.

Bake the scones:

  • Once the oven has preheated, remove the scones from the freezer and cut them into 8 evenly sized triangles. Separate them on the baking tray so they are at least 2 inches apart.
  • Generously sprinkle the 2 Tablespoons of (optional) sparkling/turbinado sugar on top of the apple scones.
  • Add the scones to the oven and bake for 16-18 minutes, until cooked through. (*Please note: if your scones are not as tall or thick as mine, they will cook faster, so make sure to check at the 16-minute mark*)
  • Remove the scones from the oven and transfer to a wire rack to cool. 

Top with apple icing & serve!

  • Once the scones have cooled, make the apple spice icing. Whisk together the powdered sugar, apple pie spice, and oat milk until you have a thick but smooth icing. Add more oat milk as needed.
  • Drizzle the icing over the apple scones and let it set for a few minutes to harden. Serve & enjoy!

Notes

  • Store baked apple spice scones in a closed container at room temperature for 2-3 days, in the fridge for 3-4 days, or in the freezer for up to one month.
  • Let frozen scones defrost at room temperature for about 1 hour to enjoy!
