Baked Cinnamon Sugar Apples

These 6-ingredient baked cinnamon sugar apples are so easy to make! Fill them with vanilla yogurt and granola for the perfect vegan & gluten-free breakfast parfait.

Ingredients 

  • 3 large Honeycrisp apples
  • ½ Tablespoon lemon juice
  • 1 ½ Tablespoons sugar
  • 1 ½ Tablespoons brown sugar
  • 1 ½ Tablespoon vegan butter melted
  • 1 teaspoon ground cinnamon

Optional toppings

  • ¾ cup vegan yogurt
  • 3 Tablespoons granola

Instructions

  • Preheat the oven to 375F and prep the apples by cutting them in half and trimming off the round ends so they lay flat. Then, use a melon baller to remove the seeds from the center of each apple half.
  • Add the apple halves to a baking tray and coat them with lemon juice.
  • In a separate bowl mix together the sugar, brown sugar, melted vegan butter, and cinnamon.
  • Coat the apples with the cinnamon sugar mixture. Then, add to the oven to bake for 40-45 minutes until the apples are soft and tender, but still hold their shape.
  • Remove the cooked apples from the oven and let them cool slightly.
  • Serve the baked apples as is or add yogurt, granola, or any toppings you prefer before enjoying!

Notes

  • Baked Apples are really best enjoyed right after baking when warm!
  • However, they can be stored in a closed container in the fridge for 48 hours. After that, they get a little too soggy and aren't as good.
  • They do not freeze well.
