Preheat the oven to 375F and prep the apples by cutting them in half and trimming off the round ends so they lay flat. Then, use a melon baller to remove the seeds from the center of each apple half.
Add the apple halves to a baking tray and coat them with lemon juice.
In a separate bowl mix together the sugar, brown sugar, melted vegan butter, and cinnamon.
Coat the apples with the cinnamon sugar mixture. Then, add to the oven to bake for 40-45 minutes until the apples are soft and tender, but still hold their shape.
Remove the cooked apples from the oven and let them cool slightly.
Serve the baked apples as is or add yogurt, granola, or any toppings you prefer before enjoying!
