Melt the vegan butter in a large soup pan and add in the diced leeks & spices.

Sauté for 5 minutes until leeks are soft & beginning to caramelize.

Add in the potatoes, cooked white beans, bay leaves, and veggie broth.

Bring soup to a boil. Then, cover & simmer 10-15 minutes until potatoes are cooked.

Remove Bay leaves from the soup, then use an immersion blender to blend the soup until creamy.

As a final step, stir in the lemon juice and serve the soup with any desired toppings!
