First, whisk together the matcha and hot water until it is smooth and set aside.

Then, whisk together the oat milk, sugar, applesauce, olive oil, apple cider vinegar, and vanilla.

Add in the flour, cornstarch, baking powder, baking soda, and salt. Mix into a thick batter.

Take 1 1/2 cups of the batter and add it to a separate mixing bowl. Then, mix in the matcha.

Add alternating dollops of the vanilla and matcha cake batter to a loaf pan.

Bake at 350F for 48-52 minutes. Let cool on a wire rack, then slice & enjoy!
