Pastry flour Baking powder Baking soda Salt Vegan butter Powdered sugar
First, mix together the wet ingredients.
Including the coconut milk, apple cider vinegar, sugar, oil, and coconut extract.
Add in the dry ingredients and mix into a batter.
Including the pastry flour, baking powder, baking soda, and salt.
Then, fold in the shredded coconut.
Add to 10 cupcake liners & bake at 350F for 20-22 minutes.
While the cupcakes are cooling, make the coconut frosting. Then, pipe the frosting onto the cooled cupcakes.
